June 2008 production figures show that 543,410 tonnes (provisional figures) of liquid milk was processed, a fall of 9,030 tonnes (1.6%) compared to June last year. Comparing rolling results to the previous year, production has increased by 29,860 tonnes (0.4%) to 6.82 million tonnes for the 12 month period ending June 2008.
Butter production for June shows that 10,600 tonnes were processed, 200 tonnes less than June 2007, equivalent to a 1.9% decrease. Rolling 12 month figures show that production has fallen by 4,260 tonnes compared to the previous 12 month period.
Cheese production in June 2008 was 32,700 tonnes, 1,000 tonnes (3.0%) less than production in June 2007. Looking at rolling results, cheese production has fallen by 4.3% (16,850 tonnes) compared to the 12 months to June 2007, to stand at 371,030 tonnes for the 12 month period to June 2008.

UK Manufacture of Cheese
Provisional cheese production figures for 2007 show that cheddar production was down by 7% compared to the previous year at 246,000 tonnes. Mozzarella production was also down in 2007 compared to 2006, 51,000 tonnes was produced which is a 10.5% decrease compared to the previous year. Total cheese production stood at 375,000 tonnes which is a 4.6% decrease compared to the previous year. It must be stressed however that these figures are provisional and are likely to be retrospectively changed.
